Makes about 14 to 15 scrumptious muffins:
2 cups + 1/4 cups flour
1/2 cup + 1 tablespoon demerara sugar
1/4 cup sugar
1 stick soft butter
1 tablespoon vanilla sugar
2 teaspoons baking powder
1 cup milk
1 teaspoon cinnamon
optional: a handful raisins
Prepare a muffin tin with paper cups. (Because I didn’t want to prepare another whole tin just for 2 more muffins, I also took two soufflé moulds.)
Preheat the oven to 150° C / 300° F.
Put all the ingredients except the apples in a bowl and mix them thoroughly unti they are creamy. If you don’t want to have cinnamon in there, you can leave it out. (But what’s better than apples and cinnamon?)
Peel the apples and dice them. (I chopped them in really tiny cubes.) Put the apple pieces in the dough and stir it quickly until they’re distributed evenly.
Distribute the dough in the moulds and if you want, put some raisins on top.
Put the muffin tin in the oven for 20 to 25 minutes.
And then, take out a batch of golden brown, delicious muffins.
