Coconut Snowflakes

You need:

egg white
70 grammes coconut flakes
45 grammes sugar
1 sachet vanilla sugar

 

And this is what you do:

Mix coconut flakes, sugar and vanilla sugar. Whisk the egg white very, very stiff. Then, gently stir in the coconut sugar mix. Form little balls with your hands and put them on a baking sheet lined with parchment paper.

Bake them at low temperature until they’re just a bit golden and crispy. I did it like this: I did not preheat the oven, put in the baking sheet and turned it on to 150° C (about 300° F), and let them bake in there about 20-25 minutes. Then, I turned the oven off, but let the Snowflakes in there until it was cooled.

They get quite hard and crispy after a while, but if you put them in a biscuit tin, they will be soft again after some days.
