(You can find the original recipe (in German) here. I adapted it a bit.)
For about 2-3 servings, you need:
1 spring onion
1/2 clove of garlic
2 small carrots
1 cup red lentils
1 tin tomatoes in pieces
some vegetable stock
salt and pepper, thyme, basil
First, you dice the onion and the garlic. Cut the leek in rings and grate the carrots.
Put some olive oil in a pot and sweat the onion and the garlic. Put some vegetable stock in the pot and then add the lentils.
Let them cook for about 10 minutes – Maybe add some water because the lentils soak it up, but not too much! Stir every now and then.
Add the grated carrots and the leek rings. Stir properly and let it cook again for some minutes. Then, add the tomatoes.
Let all that cook again for 10-15 minutes, try in between if the lentils are soft enough.
Season to taste with salt pepper and thyme.
Well, and then, you need Pasta. Cook it in boiling salted water al dente and put them on a plate. Put the lentil bolognese on them and serve with some fresh basil on top.
